You're not the only one who collects all sorts of random stuff in computer games and has to finish everything, I'm also an obessive pack rat with hordes of stuff inside whatever container or chest I'm using. Most of the stuff is there just in case... (and the case never comes up). I don't think I've ever done the half life gravity gun trick but I remember doing all the others myself, anything that wasn't nailed down or had the guards chasing me was in my backpack shortly after I saw it. The only thing I usually didn't bother with is pickpocketing, since its usually chance based I couldn't be bothered to do the reloads when it goes horribly wrong so I usually ignore it :)
Oh and thanks for the recoomendation of Dwarf Fortress, playing it right now (just trying the Civ Forge mod which adds 8 more trading/attacking Civs for even more excitement).
